Creamy Brussel Sprouts

My family loves brussel sprouts, we usually eat them with butter or vinegar. I found this recipe and it had all the ingredient we liked, so we decided to give it a try! So Yummy!

Creamy Brussels Sprouts
4 slices of peppered bacon
2 lbs. brussel sprouts Trimmed and halved Make sure you cut them in half, I missed that the first time. They are much better halfed.
3/4 cup chicken broth
1/2 tsp kosher salt
1/4 tsp. black pepper
3/4 cup whipping cream
cracked pepper
In a 12 inch skillet cook bacon over medium heat until browned and crisp. Drain on paper towels. Reserve 2 Tablespoons drippings in skillet.
In the skillet add Brussl sprouts to drippings; cook and stir over medium heat 4 minutes. Add broth, salt,and pepper. Heat to boiling, reduce heat. Simmer., covered 5 minutes. Uncover; cook 2-4 minutes or until liquid is nearly evaporated. Add cream. Cook 4 minutes more or until thick.
transfer sprouts to serving dish sprinkle with crumbled bacon and cracked pepper.

Zucchini Patties


This is so yummy, my mom has been giving alot of Zucchini, I have made bread and lemon blueberry cake with the zucchini. My favorite recipe is for Zucchini, this is a new recipe I got off Allrecipes. My family loved it!!! I ate them plain, Bob like it with sour cream & Salsa. They are similar to a potato pancake.
2 cups grated zucchini
2 eggs beatened
1/4 cup chopped onion
1/2 cup flour
1/2 cup grated Parmesan cheese
1/2 cup shredded mozzarella cheese
salt and pepper to taste
2 TBLS. vegetable oil
In a medium bowl,combine zucchini,eggs,onion,flour,cheeses,salt & pepper. Stir well enough to distribute ingredients evenly.
Heat a small amount of oil in a skillet over medium heat. Drop zucchini mixture by heaping Tablespoons, smooth out like pancake,cook a few minutes on each side until golden brown.

Scalloped Potatoes



10 potatoes boiled with skin on when they are cooled &soft take skin off and slice. Or you can use 1 bag frozen hash browns

1/2 cup melted butter

1 can evaporated milk

2 cans cream of chicken soup

1/2 cup chopped onion

1 cup sour cream

2-3 cup grated cheddar or sharp cheese

mix butter, milk, chopped onion, cream of chicken soup, sour cream and 2 cups cheese. Then add potatoes. Put in a 9x13 pan sprayed with Pam. Put remaining cheese on top or crushed cornflakes. Bake at 350 for 45 minutes or until bubbly.

Creamed Peas and New Potatoes

1 1/2 lbs. New Potatoes
1 bunch green onion diced ( Optional)
2 TBLS. flour
1 cups fresh or frozen peas
2 TBLS. butter
2 cups milk
salt and pepper to taste

Scrub potatoes; if the are small just take off a narrow strip of peel down the center, if they are bigger cut into chunks.
Cook in boiling water that has been salted, cook until tender. Meanwhile cook peas and onion in a small amount of water, then drain. Make a white sauce of butter,flour, and milk. Add salt and pepper to taste after white sauce has thickened. Combine cooked potatoes drained, peas, and onion mixture to white sauce. simmer on very low until heated throughout.

Lauren's Twiced Baked Potatoes

5 russet potatoes baked until soft. ( I usually do this in the microwave)
1-4 oz cream cheese
1/4 cup butter
1/2 cup sour cream
Milk to moisten and make smooth
Salt & Pepper to taste
cheddar cheese
wash and poke potatoes with fork bake until softened, let cool and cut in half, scoop out in insides
of the potato, put into mixing bowl, add cream cheese, butter, sour cream and milk mix until smooth add salt and pepper to taste. scoop filling into the potato skins, place skins on a cookie sheet and place a slice of cheese on top. Bake at 350 for 20 minutes.

Creamed Corn Like No Other

20 oz frozen corn, Thawed
1 cup whole milk
1 tsp. salt
2 TBLS. melted butter
1/4 cup fresh grated Parmesan cheese
1 cup heavy whipping cream
2 TBLSP. sugar
pinch of fresh ground pepper
2 TBLS. flour
In a medium saucepan, combine all ingredients, except the butter, flour and cheese. Bring the mixture to a simmer and continue to simmer for 5 minutes. Blend the melted butter and flour, then add to the corn mixture. Mix well and remove from heat. Place the corn mixture into a medium size heat proof casserole dish. Sprinkle with grated Parmesan cheese. Place under broiler until lightly browned. I got this recipe from my cousin Pat she is a fantastic cook and taught cooking classes at the bosch store. My family loved this and super easy!!!
