Bible Sandwiches


Bob found this health food store in Cedar City when I was in school and pregnant with Josh and I craved healthy food. I tried this bible sandwich and our family has loved it ever since. I know it might sound weird but it is so good!
Bible Sandwiches

Pita Bread (one per person) Tomatoes
Mushrooms Monterey jack cheese
Avocados Mayonnaise
Cut pita bread in half. Spread with Mayonnaise on both sides. Place sliced mushrooms on one side until covered, and then place a handful of cheese over mushrooms. Place in oven or broiler until cheese is melted. Remove; place sliced tomatoes onto cheese, then add sliced avocados, then sprouts, then put on the top of bread. Cut into quarters; place tooth picks into sandwich to hold in place.

Golden Bread Pudding
4 cups cubed bread (I used store bought french bread)
3 beatened eggs
1 tsp. ground cinnamon
3 cup warm water
1 (14 oz) Sweetened Condensed Milk
2 TBLS. melted butter
2 tsp. vanilla extract
1/2 tsp. Salt
Preheat oven to 350, place bread cubes into a buttered 9x13 dish.
In a large bowl, mix together all of the rest of the ingredients and pour evenly over bread.
Make sure all the bread is moistened. Bake at 350 for 40-50 minutes or until a knife inserted into the center comes out clean. Cool or serve warm Serve with Vanilla sauce
Vanilla Sauce
1 1/3 cup butter
5 tablespoons flour
3 cups heavy cream
2 teaspoons vanilla
1/3 cup sugar
Over medium heat melt butter, and add flour stir 10 minutes until it has a nutty aroma, do not brown. Add cream and sugar and boil till mixture is thick, remove from heat adding vanilla. Serve this wonderful sauce cold.

Norwegian Meatballs

( I know the picture is not that great but I promise they are YUMMY!)

2lbs Hamburger
2 C. Cracker crumbs
3 eggs
3 cans chicken & rice soup (reserve the broth)
1 onion, chopped
2 cans chicken broth
Salt and Pepper

Mix hamburger,crackers,eggs,onion,chicken and rice together. Make into balls and brown, pour off grease. Mix 2 cans chicken broth and reserved broth, put this in skillet you had the meatballs in and thicken with flour and water. Put meatballs back into skillet and bake at 350 for an hour. These are really yummy served with mashed potatoes.

Banana Bars


¼ cup butter, softened
¾ cups granulated sugar
1 egg
½ cup sour cream
½ tsp vanilla
1 cup flour
½ tsp baking soda
dash of salt
2 mashed ripe bananas
Preheat the oven to 350°. Grease a 9x13 pan
In a large bowl, cream together the butter and sugar until smooth. Beat in the eggs, one at a time, then stir in the sour cream and vanilla. Combine the flour, baking soda and salt in a medium bowl; stir into the batter. Finally, mix in the mashed banana. Spread evenly into the prepared pan. Bake for 20 to 25 minutes, until a toothpick inserted into the center comes out clean. Allow bars to cool completely before frosting.
Whipped Cream Cheese Frosting:
4 oz. cream cheese, softened
½ cup powdered sugar
dash of salt
½ tsp vanilla
¾ cups heavy whipping cream
In a large bowl combine cream cheese, sugar, salt and vanilla. Beat until light and fluffy. Set aside. In another medium bowl, beat whipped cream until stiff peaks form. Fold whipped cream into cream cheese mixture and frost banana bars. Yum!

Really Yummy Cinnamon Rolls

1 C milk
1/2 C butter
1/2 C sugar
3 eggs (beat really well...that's the trick)
2 tsp salt
2 T yeast
1 C water
1 tsp sugar
About 6 1/2 C flour
Melt butter in milk over low heat and cool.
Dissolve yeast in warm water with the 1 tsp sugar. Beat eggs in a large bowl until foamy. Add sugar and salt. Next, add milk mixture. Add yeast mixture. Stir in flour. Dough will be a little sticky. Let rise about 1 hour. Roll out on floured surface. Cut into rolls, crescents, or cinnamon rolls. Let rise until doubled in size. Bake at 400 degrees until golden brown (about 8-10 min). Frost when slightly warm.

Tips: After the dough is rolled out butter the dough and sprinkle a cinnamon sugar mixture over rolls. I usually do about 1 C of brown sugar and 4 tsp cinnamon.

Frosting:
3 C powdered sugar
1/3 C butter softened
1 1/2 tsp vanilla
2-4 Tbsp milk (enough until it's as thick or thin as you like it)
Mix all ingredients together.

Apple Caramel Cups

Pkg of Phyllo pastry dough

Filling:
2 tsp butter melted
1/3 C Brown Sugar
1 Tbsp lemon juice
1/2 tsp cinnamon
3 peeled and sliced apples

Sauce:
1 C packed brown sugar
2 Tbsp butter
1/4 C cream
2 Tbsp corn syrup

Cut phyllo dough and place into muffin tin. Cook for 4 min at 400 degrees til golden brown.

Add apples to sauce after sauce has come to a boil. Cook together for 5 min- over med- high heat
Pour filling into phyllo pastry serve with vanilla ice cream.

*Sometimes I make just the caramel sauce and eat it with sliced bananas and vanilla ice cream! So YUMMY

Trifle


1 Large already made angel food cake
1 8 oz cool whip
1 large vanilla pudding instant made up
1 box of strawberry danish dessert
1 12 oz bag frozen strawberries
Make the pudding according to directions fold in 3/4 of the whipping cream to the pudding.Make up danish dessert according to directions; when it is through cooking,add frozen strawberries. stir every little while until strawberries are thawed. Tear angel food cake into pieces.
First layer: cover bottom of trifle bowl with cake. Second layer spread danish about 1 1/2 cups. Third layer: Spread pudding layer about 2 cups, repeat layer until you all the ingredients. You should have at least 2 layers. Put remaining whipping cream on top and refrigerate for 2-3 hours

Creamed Peas and New Potatoes

1 1/2 lbs. New Potatoes
1 bunch green onion diced ( Optional)
2 TBLS. flour
1 cups fresh or frozen peas
2 TBLS. butter
2 cups milk
salt and pepper to taste

Scrub potatoes; if the are small just take off a narrow strip of peel down the center, if they are bigger cut into chunks.
Cook in boiling water that has been salted, cook until tender. Meanwhile cook peas and onion in a small amount of water, then drain. Make a white sauce of butter,flour, and milk. Add salt and pepper to taste after white sauce has thickened. Combine cooked potatoes drained, peas, and onion mixture to white sauce. simmer on very low until heated throughout.

Grilled Pork Chops

Wash Pork chops
Sprinkle with garlic powder on both sides
Then coat both sides with A-1 sauce.
marinate for 30 minutes
Then grill until done
They are so tender and juicy!!! Enjoy
